Description

Homemade Coffee Cake with Sourdough Discard buttery, soft, and topped with cinnamon crumble. Perfect for cozy breakfasts and weekend baking.


Ingredients

1 cup sourdough discard

1 1/2 cups all-purpose flour

1/2 cup sugar

1/2 cup brown sugar

1/2 cup butter, melted

1/2 cup milk or buttermilk

2 eggs

2 tsp baking powder

1/2 tsp baking soda

1 tbsp cinnamon

1 tsp vanilla extract

Pinch of salt


Instructions

1. Preheat oven to 350°F and grease a pan.

2. Mix brown sugar, flour, butter, and cinnamon for the topping; set aside.

3. Whisk sugar, eggs, vanilla, sourdough discard, melted butter, and milk.

4. Add flour, baking powder, soda, and salt. Stir until just combined.

5. Pour half the batter into the pan and sprinkle half the topping.

6. Add remaining batter and top with the rest of the crumble.

7. Bake 35–40 minutes until golden and a toothpick comes out clean.

8. Cool slightly before slicing and serve warm.

Notes

Add apple slices or blueberries for a fruity twist.

Use almond extract for a bakery-style flavor.

Store leftovers covered at room temperature for 3 days.
