Juicy chicken and crispy potatoes roasted in garlic butter and parmesan for a simple, family-friendly dinner.
Ingredients
4 bone-in chicken thighs
1 lb baby potatoes, halved
4 cloves garlic, minced
3 tbsp butter, melted
1/2 cup grated parmesan cheese
2 tbsp olive oil
1 tsp Italian seasoning
Salt and pepper to taste
Fresh parsley, chopped for garnish
Lemon wedges for serving
Instructions
1. Preheat oven to 400°F (200°C).
2. In a large bowl, mix melted butter, garlic, olive oil, seasoning, salt, and pepper.
3. Add chicken and potatoes, toss until coated.
4. Place everything on a sheet pan in a single layer.
5. Sprinkle with half the parmesan cheese.
6. Roast for 35–40 minutes, flipping potatoes halfway.
7. Add remaining parmesan in the last 10 minutes.
8. Garnish with parsley and serve with lemon wedges.
Notes
For crispier potatoes, broil for 2–3 minutes at the end.
You can use chicken breasts instead of thighs if preferred.
Add vegetables like broccoli or green beans for a complete meal.
