Description
Tender salmon fillets served over garlicky sautéed spinach, topped with lemon-butter sauce for a fresh, flavorful meal ready in under 30 minutes.
Ingredients
4 salmon fillets (skin-on)
4 cups fresh baby spinach
3 cloves garlic, minced
2 tablespoons olive oil
2 tablespoons butter
1 lemon (juice and zest)
Salt and pepper, to taste
Instructions
1. Heat olive oil in a skillet over medium heat.
2. Place salmon skin-side down and cook until halfway done, then flip and cook until just tender.
3. Remove salmon and keep warm.
4. In the same pan, melt butter, add garlic, and stir briefly.
5. Add spinach in batches, tossing until wilted but still bright.
6. Squeeze lemon juice over spinach and season with salt and pepper.
7. Plate spinach first, place salmon on top, and drizzle with lemon-butter sauce.
Notes
For a creamier sauce, whisk a splash of cream into the butter and garlic before adding lemon juice.
Serve with roasted potatoes or crusty bread to soak up the sauce.
